Perfect through the pairing is, not every gin is created with the thought of tonic in mind. This Winter Gin was created for enjoyment on cold Canberra nights. It starts with lightly spiced gin, infused with basil and sweetened after distillation to give it a heady flavour and complex notes. You may also find coriander, cardamom, cinnamon or tangelo ahead of the juniper gin base and the basil infusion. But you’ll likely agree it’s a combination that warms the soul.
Best enjoyed in a martini or with a dash of soda, this Winter Gin can just as easily be converted to a summer drink simply poured over ice or added to a chilled prosecco.
