This robust farmhouse ale, infused with coriander and orange zest, undergoes secondary fermentation with local Palmetto honey in large French oak puncheons for 17 months. Coriander contributes delicate floral nuances, while orange zest introduces a zesty citrus edge, balancing the honey's inherent sweetness. Palmetto honey imparts a subtle sweetness, but this beer maintains a medium-bodied, invigorating tartness, culminating in a funky Brettanomyces finish.
